This quick and easy vegan side dish recipe is so simple yet crazy delicious. Shaved brussel sprouts with pecans and apples all mixed with a delicious homemade dressing. Top with fresh parmesan or goat cheese for a vegetarian side dish.

Instructions
Make Dressing:
In a small bowl or mason jar, add olive oil, apple cider vinegar, honey, mustard, salt, and pepper. Whisk well. Taste and adjust seasonings as needed. Set aside.
Make Salad:
Shave the brussel sprouts using the shredding disc on a food processor. Transfer to a mixing bowl.
Add chopped apples and pecans. Pour half the dressing on top and mix well.
Place in the fridge for at least 30 mins to chill.
To serve, pour remaining dressing on top and mix well.
Notes
If you do not have a food processor, shave the brussel sprouts with a cheese grater.This salad will keep well in the fridge for up to 3 days.
