Layers of chia pudding made with almond milk, cherry compote, and a decadent chocolate sauce make this parfait to die for. You won't believe how easy it is to make this vegan and gluten-free dessert recipe!
Add all ingredients for chia pudding in a large mason jar. Shake well. Place in refrigerator for at least 6 hours, preferably overnight.
Cherry Compote:
Add water and sugar to a small saucepan over medium heat. Stir until sugar is dissolved. Add cherries and bring to a slow bubble. Reduce heat to low-medium and let simmer for 15 minutes, stirring and mashing cherries frequently.
After 15 minutes, add corn starch to cherry compote and stir well. Let the sauce cook for a few more minutes until the sauce has thickened. Remove from heat and let cool.
Assembly:
To assemble parfaits, add a layer of chia pudding and then cherry compote. Repeat until jars are full. Top with slice almonds and cacao nibs.
