Reduce apple cider: In a small saucepan over low-medium heat, cook down apple cider. Stir frequently (about 30 minutes). Once reduced by half, transfer to a container and let cool.
In a large mixing bowl, whisk together flour, cane sugar, brown sugar, baking powder, salt, and spices.
Add vanilla, apple sauce, and coconut oil to cooled apple cider and mix well.
Pour wet ingredients into mixing bowl with dry ingredients and use a rubber spatula to mix until just combined.
Spoon donut batter into greased donut pan and fill almost to top. You should be able to get 6-7 donuts.
Bake for 10 minutes. Remove from oven and let cool for 10 minutes before transferring to a cooling rack.
Mix together sugar and cinnamon for topping on a plate.
Use a pastry brush to brush melted coconut oil or butter on top and sides of donuts.
Place donut facedown on cinnamon sugar plate and coat well.

Apple sauce is used as a substitute for oil. You can always omit the applesauce and replace it will more coconut oil.
Donut batter should be thick, lumpy, and have "bubbles". These bubbles are a reaction to the apple cider and baking powder combining.
I recommend not skipping the step to reduce the apple cider. This enhances the apple flavor in the donuts. Without the step, the donuts will not be as flavorful.
Leftovers keep in the fridge. To heat, simply microwave for about 15 seconds.
