  1. Wash and chop the cilantro, peel and chop the onions.
  2. Add all ingredients to the food processor, and pulse a few times to reach desired consistency.
  3. Taste, and add more salt if needed. Serve right away, or chill in the fridge until ready to enjoy.

A note about BPA…

When buying canned tomatoes, make sure to look for brands that use BPA-free cans. BPA is a harmful toxin that can seep into your food and when digested, can have harmful effects on your health (eeek!) This is my favorite brand of canned tomatoes because they are organic tomatoes, the cans are BPA-free, and they always taste great!

Are stewed tomatoes and diced tomatoes the same?

No! Diced tomatoes are fresh tomatoes diced and canned with their juices. Stewed tomatoes are cooked and then canned. They can sometimes contain sugar or added seasonings, but you can find them without any additives. I think stewed tomatoes give this salsa recipe some extra omf because the tomatoes are slightly sweeter.

Note: Canned stewed tomatoes are found with all the other canned tomato varieties but if however, you cannot find them, diced tomatoes can be substituted just fine.

Pair fresh, zesty salsa with tortilla chips for the ultimate snack. This recipe is the perfect addition to Mexican dinners or great as an appetizer when entertaining guests. I don’t know about you, but taco night at my house REQUIRES chips and salsa.

Use salsa as a topping for tasty burritos and tacos! Try these vegan jackfruit pulled pork tacos, and bring a bit of zing to your morning by adding salsa onto tofu scramble tacos. Or enjoy as a low carb condiment for this delicious and healthier vegan taco salad recipe.
